A&S Roasted ChickenOn November 2, 2016, the Wits’ team created and served a made-from scratch meal to help brighten the lives of homeless youth aged 18-21 in transition at the Covenant House in Atlanta, GA. This delicious chicken recipe was a huge hit with the youth as well as our humbled team.Founded in 1972, Covenant House is the largest privately-funded agency in the Americas. Covenant House provides loving care and vital services to homeless, abandoned, abused, tra icked, and exploited children.57% of homeless youth spend at least one day a month without food, and we learned that even a simple meal can begin the healing process for a young person. That evening, our hearts were touched by the graciousness and appreciation shown by the residents, and we were proud to know that we brought smiles to many faces. To learn more, get involved, or to donate, please visit www.covenanthousega.org.Submitted by: Chef Andrew Traub, A&S Culinary ConceptsINGREDIENTSWhole 2 1⁄2 - 3 1⁄2 lb chicken, giblets removed 2 tbsp of olive oil2 tsp of kosher salt1 tsp of black ground pepper5 sprigs of fresh thyme1 head of garlic, leave cloves whole 1 fresh orange1 lemon or 1 lime(continued)MAIN DISHES99
