Breakfast CasseroleThis is an Erickson family staple for Christmas morning. It’s just not Christmas without breakfast casserole!Submitted by: Kyle EricksonINGREDIENTS12 slices of bread, cubed, crusts trimmed1 1⁄2 lbs of bulk sausage, browned and well drained 2 cups of grated cheddar cheese4 cups of milk8 eggs, well-beatenGrated onion to taste1 tsp of salt1⁄4 tsp of gingerDIRECTIONS• In a buttered casserole dish, place bread cubes, sausage and cheese in layers. Combine remaining ingredients; pour over sausage layers. Cover tightly and refrigerate overnight.• Preheat oven to 350˚F.• Bake for 45 minutes. Allow to stand a few minutes before cutting.*Add some red pepper flakes or hot sauce to taste.BREAKFAST, BRUNCH & BREADS9
