“We wish you a Very Berry” BrisketFrom “Greatest Hits” collection. It’s an easy recipe that’s really hard to mess up. Typically this is the standard brisket served at my families’ holiday meals, and perfect for a special weekend family dinner. Delicious with rice.Submitted by: Tammi WeckslerINGREDIENTSWhole Brisket (ask for first cut, fat trimmed as much as possible, roughly 1lb per person). (Costco has terrific brisket.)1 packet Lipton Onion Soup Mix1 jar white horseradish (found in refrigerated section with pickles)1 can whole cranberriesNote: I typically double the sauce ingredients because I’m a saucy kind of gal.DIRECTIONS• Preheat oven to 400˚F.• Place brisket in pan. In this order, spread cranberries on top, thenhorseradish, then sprinkle soup packet. Seal very tightly with heavy-dutyfoil.• Bake the first 30 minutes at 400˚F, then an additional 3 hours at350˚F. Let cool and refrigerate overnight. Before serving, takebrisket out of the sauce and slice against the grain. Return sliced brisket to sauce. Reheat and serve.MAIN DISHES87
