Matcha Green Tea Mini CheesecakesAn incredibly simple recipe that requires only a few ingredients. Once you get the cheesecake base down, feel free to add or embellish to fit the occasion. I’ve made these with Matcha Green Tea powder, but I’ve also made a pumpkin spice version by adding some canned pumpkin puree and using ginger snaps instead of vanilla wafers. A plain cheesecake is also delicious when paired with some macerated strawberries to top it o . You will need to have a hand or stand mixer to get the right consistency in your cheesecake batter, but I’ve definitely improvised and used a blender or even a magic bullet in a college dorm room.Submitted by: Lauren HuhINGREDIENTS1 (12oz) package of vanilla wafers 2 (8oz) packages of cream cheese 3⁄4 cup of white sugar2 eggs1 tsp of vanilla extract2 tbsp of matcha green tea powderDIRECTIONS• Preheat oven to 350˚F.• Line mu in tin with paper liners and drop one vanilla wafer at the bottom ofeach liner.• In a mixing bowl, beat cream cheese, sugar, eggs and vanilla extract untillight and flu y.• Add matcha green tea powder and fold in.• Bake for 15 minutes.• Cool & serve!DESSERTS167
