Peggermint TorteOriginally named the Donner Party cake since it is a frozen cake. Our family cleverly renamed it the “Peggermint Torte” as an homage to my Aunt Peggy.Submitted by: Erin ReeceINGREDIENTS1⁄2 gallon of peppermint ice cream (rectangle works best) 2 jars of hershey hot fudge8 oz of cool whip, thawedCRUST2 cups of crushed chocolate graham crackers (20 squares) 1⁄3 cup of melted butter1⁄4 cup of sugarDIRECTIONS• In a bowl, combine crust ingredients. Press into the bottom of 10x15 jelly roll pan. Set in freezer to chill for 5 minutes.• Cut ice cream into 1⁄2” thick slices and lay over crumbs. Cover and return to freezer for 20-25 minutes.• Heat fudge according to package. Spread fudge over ice cream - cover and return to freezer for about 30 minutes.• Spread thawed cool whip on top. Freeze again until time to serve.SERVECut with a plastic serrated knife dipped in hot water.DESSERTS161
