Homemade Tzatziki SauceI only eat gyros for the tzatziki sauce. Don’t forget to add plenty!Submitted by: Matthew DreyerINGREDIENTS1 cup of greek yogurt1 tbsp of lemon juice1⁄2 a clove garlic, very finely minced1⁄4 cup of red onion, finely diced1⁄2 of a long English cucumber2 tbsp of fresh dill chopped or 1 tbsp dried dill 2 tbsp of fresh chives, chopped1⁄2 tsp of salt1⁄2 tsp of pepperDIRECTIONS• Dice cucumbers, sprinkle with salt and place in sieve for at least 30 minutes to remove extra moisture from cucumbers.• Combine all remaining ingredients together, mix well.• Add drained cucumbers to yogurt mix.• Keep refrigerated until ready to use.ADDITIONAL NOTESThis is a perfect dip for grilled chicken or beef kebobs and of course pita bread. For ultimate flavor be sure to use fresh herbs and veggies!SAUCES151
