Miss Mary’s Mac & CheeseWhen my husband and I moved from Northwest Indiana to Atlanta, we were trying so hard to find a “Northern” recipe that would satisfy the discerning palates of our newfound “Southern” friends. And voilá, this one was a hit!Submitted by: Mary KelmINGREDIENTS8 oz of small sized pasta (your preference) 4 oz of extra sharp cheddar cheese, grated 4 oz of gruyere or muenster cheese, grated 4 oz of swiss cheese, grated4 oz of colby cheese, grated 3 cups of milk1⁄3 cup of all purpose flour 4 tbsp of unsalted butter1 1⁄2 tsp of salt1⁄2 tsp of black pepperDIRECTIONS• Preheat oven to 375˚F.• Cook the pasta for one minute less than the minimum time listed on thepasta box and drain well.• Heat the milk in the microwave until hot. In a sauce pan, melt the butterand then whisk in the flour. Add salt, pepper, and milk to the butter andflour mixture. Continue to cook and stir the sauce until well blended.• Combine the pasta and cheese in a nine inch baking dish, mixing well.Evenly distribute the mixture.• Pour the sauce evenly over the mixture.• Bake for 30 to 35 minutes.VEGETABLES & SIDE DISHES137
