Zucchini CasseroleIt’s a crowd favorite!Submitted by: Kyle EricksonINGREDIENTS4 to 5 zucchini squash, unpeeled and sliced lengthwise 1 medium onion, thinly sliced4 medium tomatoes (or canned tomatoes)2 cloves of garlic, choppedParsley and oregano, to taste2 cups of shredded cheddar or mozzarella cheese 5 slices baconDIRECTIONS• Preheat oven to 350˚F.• In a rectangular Pyrex dish, layer in this order: zucchini , onion, tomatoes,chopped garlic, cheese and bacon (uncooked). • Sprinkle with parsley and oregano.• Bake for 30-40 minutesVEGETABLES & SIDE DISHES135
