“Show Black” BeansWhether as a side dish or main meal, this Cuban comfort food always hits the spot.Submitted by: Michelle MulcaheyINGREDIENTS1 lb of black beans 10 cups of water2 cloves of garlic2 bell pepper stemsSOFRITO1 green pepper, chopped 1 red pepper, chopped1 large onion, chopped4 cloves of garlic, chopped 3 tsp of salt1 tsp of oregano2 tsp of cumin2 tbsp of olive oil1-2 bay leaves2 tsp of white wine1 tsp of sugarDIRECTIONS• In a large pot soak black beans overnight in 10 cups of water, along with 2 cloves of garlic and 2 bell pepper stems.• Cook beans until so . (For the rest of the preparation, use the soaking water to retain the flavor.)SOFTRITO• In a large pan, sauté all of the sofrito ingredients together in olive oil.• Add 1 cup of the cooked beans to the sofrito and mash. Mix well.• Add the rest of the beans, bay leaves, white wine, and sugar. Mix well.• Cook for at least 1 hour on low heat, adding water if necessary.• Serve over rice, with olive oil and vinegar (red wine or apple cider) to taste.VEGETABLES & SIDE DISHES131
