Grandmas Marinated VegetablesMy grandmother made this for every holiday. I moved into the house my grandparents built and when I renovated the kitchen, I came across some recipes that had fallen behind the oven. I don’t know how long they were there, but the paper is burned in places. My grandmother must have lost these when she was cooking one holiday.Submitted by: Kristin QuarlesINGREDIENTS1⁄2 cup of Tarragon vinegar 1⁄2 cup of Wesson oil3⁄4 cup of sugar1 tsp of salt1 can of English peas, drained1 can of French cut green beans, drained 1 jar of small pimentos, drained3 stalks of celery, chopped2 small onions, finely cut1 can of water chestnuts, sliced (optional)DIRECTIONS• In a large pan heat the vinegar, oil, sugar, and salt until the sugar melts.• In a large bowl, combine the peas, green beans, pimentos, celery, onion andwater chestnuts. Mix well.• When the sugar mixture cools, pour over vegetables.• Refrigerate overnight.• Serve cold.VEGETABLES & SIDE DISHES123
