Chicken Spinach Lasagna CasseroleSubmitted by: Jamey EricksonINGREDIENTS10 oz. package of frozen spinach, thawed and drained 2 cups of cooked chicken, shredded2 cups of grated cheddar cheese1⁄3 cup of chopped onion1 tbsp of cornstarch 1⁄2 tsp of salt1⁄4 tsp of black pepper 1 tbsp of soy sauce1 (10 oz) can cream of mushroom soup1 cup of sour cream1 (4.5 oz) jar of sliced mushrooms, drained 1⁄3 cup of mayonnaise6 lasagna noodles, cooked1 cup of grated parmesan cheese1 cup of chopped pecansDIRECTIONS• Preheat oven to 350˚F.• In a large bowl, combine spinach, chicken, cheddar cheese, onion,cornstarch, salt, pepper, soy sauce, soup, sour cream, mushrooms, andmayonnaise.• Put a layer of noodles in the bottom of a greased 9x13x2 inch baking dish.• Spread half of the spinach mixture over the noodles.• Place another layer of noodles on top and cover with the remaining spinachmixture.• Sprinkle parmesan cheese and then the pecans on top.• Bake for 60 minutes.MAIN DISHES107
